Unlike black tea, oolong tea is not 100 percent oxidized. The degree of oxidation may vary from 5 percent to 85 percent, for most oolong teas, it is 20 to 60 percent.
Oolong tea leaves last longer and stay fresh longer than green tea, since they contain less moisture because of the oxidation.
